Trip with my girlfriend... and her friend?? Advice needed

not sure if this is the right spot for this. If it's not, sorry, and Ill go post it somewhere else. Here's the deal: my girlfriend is traveling for a month in Europe with her best friend (let's call her E). I'll be in Europe with my family near the end of the summer, and am going to meet up with my gf then. E's boyfriend is in the same situation, so all 4 of us were going to meet in one place and then go our own way for a week, with E and my gf meeting back up at the end of that for another few weeks in Europe.

However, E's boyfriend now can't go, for totally understandable reasons. However, E seems to be, both according to her and my gf, not capable of spending that week on her own (doesnt want to be in foreign place alone, bad at getting around, &tc) It is the first time my gf and I will have travelled together, and we're both really looking forward to it. But I don't want it to become me, my gf, and E. I know that my gf doesn't want that either, but I can see how things play out and that ends up happening anyway. We've already booked accomodation and train tix and stuff for 2. My gf has a few friends in Europe that E could maybe hang out with, but not sure how they'd respond to that.

tldr- gf and I supposed to travel together, now her bff may tag along, but neither of us want that, what do we do
