Best place to travel in November?

Hi,

I've been working all year and I think it's time for me to take a break. I'm living in Canada, so November is starting to get cold and snowy. I was looking to go in Iceland for a small 5 days stopover to capture the Northern Lights and try to visit some wild place. After that I would like to go 2 weeks in Europe in a sunny place, but from my search, I found out that Spain and Croatia are relatively cold (10-15 °C) and I want to go away from those temperatures. Do you know any place in Europe where it's sunny, warm and where we can swim (beach or pool) during fall/winter? I don't know if November is too late for fall colors, but since I can't go in vacation before that, I have no choice other than going in Vacation later winter or spring.
