First weekend in Rome. Solo. Rough itinerary that I'd like some advice on. Thank you!

Note I'll be by myself and do enjoy walking cities quite a bit. Also always looking for good local food, so I have some recommendation questions below based on my itinerary mapping. I always get better food advice from local redditors than just googling. Open to switching any items below other than the Vatican tour, and please let me know if there is anything I'm truly missing from a 1.5 day itinerary for a first time Rome visitor. Thank you!

Staying at Palazzo Naiadi, Friday and Saturday night. Arriving at airport Friday night at 19:30.

Friday:

Out of hotel by 9 PM for dinner. Ideally good dinner restaurant (for a party of 1), but does not need to be fine dining at all. Would love some recommendations of a good dinner spot between Palazzo Naiadi and Colosseum. Rooftop would be a huge plus as well.

After dinner, walk to Colosseum to see it at night.

Walk back toward hotel, stop for drink or two (would love any ideas of a place to stop for this), and home in bed by midnight.

Saturday:

7:30 AM Vatican tour3 hours. Hotel to Vatican by train.

Train back to Roman Forum. Lunch in that area (again, would love recommendations)

Walk to Pantheon.

Break, beer.

Walk to Trevi Fountain.

Train to hotel.

Rest

Dinner at 8 (where?)

Out for cocktails and some nightlife (where?)
