Southern Spain Destinations

I know this topic has been beaten to death but I would like to hear more opinions.

So back story, my girlfriend and I booked some very cheap tickets from Toronto to Barcelona round trip. We have already been to Barcelona and the surrounding area so we decided to head south.

We booked tickets to Jerez for immediately after we land in Barcelona (Sept. 4th). We are flying back to Barcelona from Seville on the 14th. So we have 10 days totally unplanned. We had the idea to rent a car in Jerez, head south to the coast and loop around to Granada and then finally Seville.

2 days in Seville 2 days in Granada Is Gilbraltor worth seeing? Some nice beach towns for a night or two wouldnt hurt either.

Any suggestions on how to organize these 10 days?
