What happens with checked-to-final-destination luggage during a long layover? Can I go explore?

My situation is as follows I have a long journey, 4 flights, 3 layovers.

When I left, I checked my luggage to my final destination for ease.

Now I'm at my first layover, Toronto, in the airport, and I'm waiting for my second flight to Hong-Kong.

In Hong-Kong I have a 13h 50m layover, from 5am to 6:50pm, I would like to get out and explore a bit.

So there is my question :

Do I have to "un-check' my luggage or will they keep it going like if I was at the airport. I would love that! they keep it, I don't need it. But I also understand that they might not want to keep something for someone's who is not on the grounds for safety reasons.
