What's a good Italy 5-6 day roadtrip that's focused on the countryside and/or coast, NOT the big cities?

My GF and I can swing 5-6 days in Italy, with a budget of around $3,000. We're looking to rent a car and explore the countryside, staying at charming picturesque towns and 'smaller cities'. Focus on nature, exploring farms or vineyards, gardens, hiking, nature walks, natural landscapes, coastal towns, quaint villages, good quality food, etc. We have zero interest in the big cities like Rome, zero interest in religion or churches, and we're a little tuckered out by art museums.

We hate the idea of racing around and always plan on returning back to Italy again in the future... so I'm really hoping to pick something that is attainable, leisurely, and really allows us to "settle in" and absorb the scenic lifestyle and ambience while we're there.

What would you guys recommend? We'd be flying out of LAX... beyond that, neither of us know absolutely anything about Italy or how logistically possible it is to secure lodgings for something like this, or what the best in & out airports would be based on the roadtrip...
