Suggestions for 3 Weeks in Mexico

Hi,

My girlfriends and I are travelling to Mexico for a little over three weeks. I've put together an itinerary and wanted any suggestions or recommendations for our itinerary. What I'd like to know is what are the best hostels to stay in, are we spending too much time in certain locations, should we reallocate days to different locations, are there certain holidays/festivals in certain locations I should try to attend, are there multi day trips and excursions that I should know about (i.e. multi day backpacking, or a cruise), and should we add certain activities that I may not have considered?

As far as financing is our budget realistic? To clarify, I've used the backpackers pricing index to price how much to spend for food and a hostel (it accounts for a cheap hostel, three budget meals, two public transportation rides, three beers, and a paid cultural attraction). I've used a $500 flight credit, which is why the out of pocket price for flying from Seattle to Cancun is $154.82.

The flight is the only thing I have paid for and have listed the inter-Mexico prices listed by searching those dates on Google flights. The "Extra Considerations" were not accounted into the total price and disregard the right most column (my girlfriend works remote and has allocated some days for working). Also, on the very right hand side, I like to consider how many full 12 hour days I will experience within the 23 days and by accounting for travel times (flights, waiting in airports, day-time buses) I've counted 19.5 days full days, so 3.5 days of total travel time.

Any thoughts, suggestions, and recommendations are appreciated!
