5 Week European First Timer Trip

Now that I have ample time to day dream about my next trip (especially since I was supposed to be leaving for one this week), I am trying to curate the perfect trip sometime when the future allows.

I'm based out of America and would love to spend 5 weeks in Europe. I've only ever been to Switzerland and found it to be absolutely gorgeous, but extremely expensive. I'm not ashamed to admit that I definitely want to hit all of the tourist highlights and would ideally begin this trip in the "shoulder season" of early May. However, I don't want to spend an arm and leg for this. I don't expect the best of the best accommodations, but probably mid/mid-low tier. Thankfully, I am still employed and would like to pay for the trip piece by piece months in advance.

As of right now, I'm thinking Paris, Amsterdam, Berlin, Prague, Vienna or Salzburg, Venice, Florence, Rome, Nice, and Barcelona. I would also love to see Budapest, Bruges, and Zagreb, but my purposed itinerary is already likely excessive with my timeline.

I would be going with my boyfriend and we would prefer Airbnb over hostels/hotels. Never done couch surfing, but it does not seem like something we would enjoy. We are in our early 20s and love nature, museums, and food, but who doesn't? We aren't huge partiers and don't really like beer, but we do like to drink as well as go to bars and clubs on occasion. I have already looked at the prices of Airbnbs in these areas and it seems relatively affordable.

I am somewhat concerned with my plan and was wondering how other people have budgeted time/money with similar itineraries. I don't mind constantly moving during vacation, so packing up every 3 days doesn't sound too terrible. We are also not opposed to doing quick day trips in smaller cities that may fall within train ride of our destination (such as a stop into Bruges from Paris to Netherlands). The plan is to get a Eurail pass and begin in either Paris or Barcelona. Does this at all seem possible and enjoyable? Any comment/recommendation is valued!
