Looking for input on an upcoming trip to Japan

Ok, here’s what I got so far:

When: Spring 2021
Duration: ~2 weeks
Cities I want to visit: Tokyo, Kyoto, & Aomori(?)

In broad strokes, I’m planning on visiting 3 cities and spending 3-5 days in each depending on size and what I plan to do. My thinking right now is that I want to break the trip in half with a visit to a Ryokan as a small ‘recharge’ before continuing on with the trip. I’m sure I’ll be able to find plenty to do in each city so I don’t want to get bogged down in the nitty gritty of finding particular things to do but I do have some questions I’d like to ask.

Is spring the best time to visit? Sakura viewing seems to be one of the most popular things to visit japan for but I’m not 100% sure I want to plan the timeframe of my trip around it. I’ve heard late fall (October-early November) is a great time to visit, and fall is generally my favorite season anyway. I know this is probably personal but Hanami worth planning my trip around or should I visit during a slightly less touristy time?

Is Aomori a good place to visit? Vague I know, but my thought process is that of the 3 cities I visit I wanted one of the to be a little more off the beaten tourist path. Both Tokyo and Kyoto have a million things I want to do but I also wanna see a different, and possibly slower paced side of Japan. Is there a different city you would recommend reddit, or is Aomori a good place for what I'm looking for?

What order should I visit the 3 cities? Probably not critical but I was thinking Tokyo -> Aomori -> Kyoto. My thought process being that I could stop at a neat Ryokan either before or after Aomori to take a pause half way through the trip but maybe running all the way to the top Honshu and back isn’t the best use of time in the middle of my trip. This brings me to my next question though…

Good Ryokan? I know most any Ryokan will be a nice break from running all over the place, but if anyone has been to one that they highly recommend I’d love to know about it. In general, I’m hoping to find one with an Onsen, is a little secluded, and is fairly traditional. Also worth mentioning that places with little to no English won’t be a problem, in fact that’d be awesome. I’ve been studying the language for about half a year and as I’m already bilingual I’ve been picking it up pretty quickly, which brings me to my last question.

Ways to use the language? Since I’ll have put so much effort into learning the language by the time I arrive I’d naturally like to find as many opportunities to us Japanese as possible. I know this is super vague and the answer is probably “just talk to people” but, any tips on how to best engage with people and use Japanese would be great.
