I'd like to take my (British citizen & resident) boyfriend (Turkish citizen, German resident) on a surprise trip somewhere nice. He's not a huge fan of flying for environmental reasons; what mainland European destinations do you recommend?

At the moment I'm looking at booking CenterParcs which is very nice, but a little boring! I'd like to be slightly more creative if possible.
