Looking for Destination Advice: March 2021

Hi all! I've been doing a lot of searching around and haven't really been finding the seasonal advice I've been hoping for.

I recently had to cancel a trip due to scheduling conflicts and have ended up with $200 in flight credit.

I'm an adult who went back to school for a graduate degree and I'll be graduating next year. From March 12-20 will be my last Spring Break. I was thinking of using my cancelled flight credit to go somewhere for spring break, but I'm having trouble finding any info about good places to travel to in March. Searching spring break destinations yields college beach trips, and as a 31 year old who hates beaches, that's not quite my cup of tea. Cheap travel options gets me a lot of promising results, but no info on if March is a reasonable time to check out Oregon.

So my question is: Where should I go? Where would you go? What's a good destination for mid-march where the colder weather won't make the trip impossible, that won't break the bank?

I'm 31, would be a solo traveler, I live in Washingon DC, USA. I have an up to date passport. I am a foodie who loves museums and hiking (but not camping overnight). I don't mind international travel if it's more budget friendly. My budget is probably in the 600-800 range on top of the flight credit. I don't mind spending more on the flight than I have in credit. I don't have to be away the whole week.
