What are the best ways to fly as cheaply as possible?

Once the situation normalises a bit, I would really like to meet up with my long distance gf. I live in the Netherlands, she lives in Mexico. We would like to find a really cheap way to meet up because we don’t have much to spend. I know of google flights, sky scanner etc (but never seen super cheap flights outside of Europe) and I’ve heard some people simply go to an airport, ask which flights are almost leaving and get a literal last-minute ticket very cheaply.

What would be the cheapest way to meet up, without it really mattering where we meet up (of course it’s cheaper if we choose either the Netherlands or Mexico since only one of us would have to fly but I’d also like options for any other country)?
