How to give a gift of travel?

I’m an inexperienced and reluctant traveler myself. I have very close friends who are getting married and who don’t want cash as a gift but who do value world travel and experiences. I’d like to give them a trip as a gift, one that they can schedule themselves later but that I’ve already covered the costs for. I understand it will be expensive.
