Traveling to Japan: Do I have to book accommodations way in advance?

My husband and I plan to travel to Japan as soon as the pandemic ends. Our tickets are flexible, so as soon as we know what's going on we'll solidify the tickets. I've noticed that all the hotels/guesthouses/etc. that can be booked online from the U.S. are booked at least 3 months in advance, if not 6 months.

Is this the way it works? Do we have to know exactly where we're going, and for how many days in order to find a good place to stay?( By "good" I mean 10-20K yen a night and somewhat stylish/comfortable. ) Or can one wander around and find accommodation when you're there?

We would prefer to have some flexibility after the first couple nights in Tokyo, but will make a rigid itinerary if it's required.
