I've been to 21 countries & my partner hasn't travelled. I want to surprise him with flight tickets. Where to go?

My partner (32M) has never been abroad (we are from Australia) and I spent my 20's doing a ton of solo travel.

I want to go overseas with him in perhaps about a years time. I'm about to buy my first home (hopefully within the next few months) and then I want to go overseas for about three weeks.

He would love to go to Japan but I've been 3 times. It's my favourite country, however I want our first trip abroad to be to one that we've both never been to. He's very open minded on where we go and I feel that he would handle more 'challenging' countries well as he's very laid back, curious, open minded, and adaptable. We go camping like twice a month so we aren't fancy hotel people.

I'm considering Uzebestian as it's been on my list for years. We both love nature, architecture, food, random adventures and we aren't really tropical beach people so islands and tropical destinations don't really interest me. I can't handle the heat so preferably nowhere boiling hot.

I've already been to the following countries New Zealand, Japan, Fiji, Korean, China, Hong Kong, Vietnam, Cambodia, India, Netherlands, Switzerland, Spain, England, Scotland, France, Germany, Czech Republic, Italy, Morocco, Vatican City, America (+Hawaii), and Canada.

If you have any recommendations I would love to hear them. I'm very down for off the beaten track countries that aren't too expensive. We would probably be backpacking and cheap hotels/airbnb. Thanks a ton :)
