Scotland in June

Renting a mini van in London driving to Edinburgh.

Have about 12 days in Scotland, should we do the NC 500 or the Outer Hebrides?

Also how booked to ferry crossings get, do I need to book in advance or show up early?

I'm looking at driving itineraries on Nordic Vistor
