What did you actually do in all inclusive resorts

My husband and I are looking for a trip to Caribbean area ( now we are eyeing on Dominican Punta Cana). As this is our first trip, we're thinking about staying in an all-inclusive resort. However, I myself find the activities there not very diversed. It appears all of places only include snorkelling and diving. I am not good with water so I don't feel comfortable doing those. Plus, I am a culture/history/exploring person so I'd feel so bored if all we do is just eat, visit the beach, do some water sport, dance at night. Did you really have to pay extra to get other experience (e.g: history tours, cooking class, etc) ? Thanks!
